S'MORES COOKIE BARS


S'MORES COOKIE BARS
  • 1/2 cup butter, room temperature
  • 1/4 cup brown sugar
  • 1/2 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/3 cups all purpose flour
  • 3/4 cup graham cracker crumbs
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2-4 king-sized milk chocolate bars (e.g. Hershey’s.  You might need more depending on the size of the king-sized bar.  Basically you need enough to cover and 8x8 pan)
  • 1 1/2 cups marshmallow creme/fluff (not melted marshmallows)
Directions:
  1. Preheat oven to 350°F. Grease an 8-inch square baking pan.
  2. In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla. In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at a low speed until combined.
  3. Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough. 2 king-sized Hershey’s bars should fit perfectly side by side, but break the chocolate (if necessary) to get it to fit in a single layer no more than 1/4 inch thick. Spread chocolate with marshmallow creme or fluff. Place remaining dough in a single layer on top of the fluff (most easily achieved by flattening the dough into small shingles and laying them together).
  4. Bake for 30 to 35 minutes, until lightly browned. Cool completely before cutting into bars.

Lazy Day Chicken N Dumplins

4 boneless skinless chicken breast, cut in small chunks.Cooked
(or 1 quart bag of the shredded chicken from the crockpot chicken recipe)
2 cans of condensed cream of chicken soup
1/4 c. finely chopped onion
2 cans of water
1 pkg. of grands biscuits
1 chicken bouillon cubes
 (I also sometimes add frozen cubes of chicken stock that i make in ice cube trays from crockpot chicken)

 Combine all ingredients except the biscuits, in crockpot. Cover and cook on low for 6 hours, 30 minutes before serving, tear biscuits into 1 inch pieces. (I just quarter them). Add to slow cooker, stir. Cover and cook on high for an additional 30 minutes or till biscuits are fluffed up and cooked through.

My favorite meal to make during a rainy cold day or the winter.

Apple roast sandwiches

 This is a great staple to have for freezer cooking, I can make this stretch to 4 meals. I use Quart size freezer bags, freeze flat and take out the night before for lunches. My kids love them.


One 4lb pork roast
1/3 c. Worcestershire sauce
3/4 c. brown sugar
1 c. apple juice
1/2 tsp. salt

Place roast in crockpot,douse roast with Worcestershire sauce, all sides. Press down brown sugar on top and sides of roast. Pour apple juice into pot. ***NOT OVER ROAST*** cook on high for 2 hours then low for 6 hours..Or you can set it on low for 8-10 hours. Shred and cool down.

If freezing..thaw over night  and warm meat..SERVE  we use onion rolls and applesauce. or just make sandwiches..Anyway you eat it I guarantee you will love it.
